  • Soak the peach gum in clean water overnight for about 8 to 12 hours until soft, remove any foreign matter, then rinse again.
  • Wash the pears clean, remove the core, then peel.
  • Soak the Chinese red dates and white fungus in warm water for about 15 to 20 minutes until they swell.
  • Put the pears, peach gum, white fungus, goji berries, Chinese red dates and longan into a pot with the water and rock sugar, then stew over medium heat for 30 to 40 minutes, until the pears are soft and the peach gum turns clear like jelly.

Once cooked, it can be served warm for a soothing effect, or chilled for extra refreshment on hot days. It makes a fitting dessert to end a meal, offering both flavour and benefits for the body.
