Chef Patrick Brings Thai Curry Noodles to World Food Championships in US

Dr Kritkhun Phanitayankorn, or Chef Patrick, an academic and expert in Thai and Asian cuisine, took part in the international culinary competition World Food Championships 2026 in the Noodle category on 15 October 2026 at the Indiana State Fairgrounds in Indianapolis, Indiana, United States, to showcase the potential of contemporary Thai cuisine to the international culinary world. The entry presented in this competition combined homemade noodles, Thai curry and American Wagyu beef, prepared entirely by hand through every step within a limited time. At the same time, he is continuing to develop and discuss a Thai and Asian cuisine teaching curriculum project with a culinary college in the United States.

The Road to the World Stage and Creating the American Wagyu Curry Noodles

The World Food Championships is an international culinary competition that brings together experts from various regions to compete under constraints of time, cooking technique, taste, creativity and plating. Dr Kritkhun Phanitayankorn earned a place in the main competition after successfully winning a Golden Ticket in the Taste of the Croix Valley Online Recipe Challenge. The entry that secured his selection was the Thai-Style Croix Valley Signature Trio Ribeye, which combined American seasonings with Thai flavours, comprising grilled ribeye, a jaew dipping sauce mixed with apricot and chipotle, served with pineapple relish and coconut mashed sweet potato.

For the Noodle category on the main stage, Chef Patrick specially developed a recipe called Thailand's Golden Harmony: American Wagyu Curry Noodles. The highlight of this dish lies in the use of homemade noodles in two forms: boiled noodles with a soft, chewy texture and crispy fried noodles, served with Thai curry and American Wagyu beef, alongside New York strip grilled with the fragrance of lemongrass and kaffir lime leaf. The dish was also arranged with pickled mustard greens, shallots, lime, chilli and kaffir lime oil to create contrast in texture, aroma, colour and composition on the plate. The competitor managed every step personally, from mixing the dough, rolling and cutting the noodles, boiling and frying the noodles, cooking the curry and grilling the meat, through to plating.

Building on This Knowledge for Research and Thai Culinary Curricula in the United States

Dr Kritkhun Phanitayankorn has a background spanning the culinary profession, business administration and education, having worked in teaching, recipe development and food business management, alongside research into Thai cuisine, culinary tourism, and the use of food culture as a creative force at the international level. He is currently developing and discussing a Thai and Asian cuisine teaching curriculum project with a culinary college in the United States, to pass on cooking skills, understanding of ingredients, eating culture, and approaches to adapting Asian cuisine for the international market. Chef Patrick believes that Thai food's value lies not only in its taste but also reflects wisdom, culture and creativity, and that the experience gained from this competition will help build on his teaching and make Thai food more accurately recognised abroad.
